DO YOU KNOW WHAT TODAY IS?!
If you answered Thursday or St. Patrick’s day, you would not be wrong, but neither of those things warrants yelling on the Internet. (Unless you’re a die-hard St. Paddy’s fan, in which case I assume you are Irish, under the age of 25, or saw a leprechaun in a tree this morning.)
Today, friends, marks the start of something I’ve been waiting for since March of 2015.
No, I didn’t get a fancy television offer, meet Justin Bieber, or get whisked away on a surprise tropical vacation by my roommate. Maxim did not call about my pictorial, and as far as I know, Gronk has yet to endorse The Dude Diet. It’s so much better than any of those things!
Can you handle the suspense? Did you already guess what it is?? Are you having as much fun with this intro as I am???IT’S BIRTHDAY PRINCESS WEEK ON DOMESTICATE ME!
Given my love of creative visualization (and mild red wine hangover), I like to think you’re somewhere inappropriate right now screaming, “It’s here!!! It’s HEEEERE!!!”
My actual birthday isn’t until Tuesday, but like any self-respecting birthday princess, I’ll be celebrating for a full week. I’m already two days in. (It’s going well, thank you.) There will be co*cktails and treats and confessions happening, both in real life and on the blog, and even though 29 is sort of a weird transitional bday, I plan to make it count. After all, 28 was a hilarious, andexciting, and stressful, and loooong year. It deserves to go out with a bang.
I sincerely hope Loganremembered to order my Momof*cku cake…
Anyhoo, I thought we’d kick things off with some dressed up booze in the form of a Kiwi Kiss co*cktail. This sassy green c-tail isa sweet-tart blend of kiwi, fresh mint, lime juice, and light rum, and the resulting flavor party isnothing short of delightful. It’sbasically a kiwi-laced mojito, andthanks to the fruit’s natural sweetness, you can bypass the boatload of added sugar—excellent news for both your bikini bod and your hangover.
The recipe yieldsfour drinks, but the proportions are easily multiplied for a larger crowd, and since you just toss the ingredients in a blender, it’s the ultimatebatch co*cktail for spring entertaining. Easter brunch! Bridal/baby showers! Birthdays! (duh.) OOOOH, and come to think of it, these are the perfect hue for a St. Patrick’s Day sip. God, I’m really killing it this week.
Prep Time: 10 minutes minutes
Total Time: 5 minutes minutes
Yields: 4 co*cktails
Ingredients
- 4 kiwis
- 1/3 cup fresh mint leaves
- Juice of 1 lime
- 1 cup light rum
- 1 teaspoon honey or agave
- Club soda
For garnish: (optional)
- Kiwi or lime rounds
Instructions
Slice the kiwis in half crosswise. Scoop the flesh from each half into a blender.
Add the mint leaves, lime juice, rum, and honey or agave. Blend until well combined. (There will still be visible kiwi seeds, and that’s okay!) Taste, and feel free to add a little more honey or agave if necessary.
Divide the kiwi mixture amongst four glasses filled with ice. Top each co*cktail with club soda. (I recommend 2-3 ounces per co*cktail.) Garnish with a kiwi or lime round if you like.
