What is skate wing?
Skate is a type of shark, and skate wing is a filet from the huge pectoral fins. They are horrifically adorable considering we consume them. They resemble a mix between a sting ray and a typical fish, and I've never seen a photo nor video of one where it didn't have a smile on its face.

What does skate taste like?
It's very, very mild with a firm texture. I've heard rumors that skate has actually been passed off as scallop before, and it's no surprise: although they are generally a less expensive cut of fish, skate wings have a unique texture similar to scallops if allowing oneself just a small stretch of imagination.

how to cook skate wings
There are many ways to prepare skate wing, but my favorite is loosely based on a classic French Skate Wing recipe: pan fried with a lemony caper butter sauce, very similar to the meunière style.
This method starts with a quick dunk in some flour so that the skate wing gets nice and crispy in the pan, but not so heavy that it feels like it's deep fried or heavy breaded. The flour also helps add just a bit of thickness to the butter pan sauce.

Pan Fried Skate Wing
Inspired by a classic French Skate Wing recipe, this pan fried skate wing with butter caper sauce feels like a fancy restaurant meal at home

Ingredients
- 2 pieces skate wing
- 1 cup flour
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 Tablespoons of olive oil
- 2 Tablespoons butter
- 1 Tablespoon capers drained
- 1 Tablespoon lemon juice
Instructions
Pat the skate wings dry. Combine the flour, salt, and pepper. Dredge the skate wings in the flour, pressing them into it to make sure it coats each wing and gets into the creases of the skate.
Gently shake off any excess flour from the skate wings. Place a large skillet over medium heat. Add two tablespoons of olive oil. Once the oil is hot, gently place the floured skate in the pan. Cook for 3-4 minutes, or until the bottom starts to brown. Flip, and cook for 3 -4 more minutes.
Remove the skate from the pan and set it aside. Add the butter and capers to the pan. Cook over medium heat until the butter melts and just starts to brown. As soon as the butter starts to brown, remove the pan from the heat, stir in the lemon juice.
Serve the skate immediately with the the lemon butter caper sauce poured over it.
